It's true. All edible fungi, even the ordinary white button mushrooms found in supermarkets are capable to prevent and reverse cancerous cell changes. Not sure exactly why. It could be because the fungi find, concentrate and pass on to us all of the trace mineral we require for a healthy immune system. It could be because mushrooms are rich in polysaccharides (interesting complex sugars) that seem to boost health. The mushrooms provide a good source of B vitamin and protein with few calories. The anti-cancer compounds, anti-tumors and anti-bacterial substances found in mushroom caps, stalks, gills as well as the underground structure (mycelia), could be the reason.

You should cook them instead of eating raw mushrooms. Scientists from the University of Nebraska Medical School have found that mice fed unlimited quantities of raw mushroom (Agaricus bisporus) develop significantly more malignant cancerous tumours in their lifetime compared to a control group.

The fungi are everywhere in the months of August and Septembre. I search for them wherever I go.

The woods around me are particularly generous with their chanterelles. They're beautiful, cornucopia-shaped and have an amazing taste. It's not just the orange mushrooms that I like, but also the little black ones. Sometimes, after mushrooming walks we are left with no bags.
